I have to admit that I’m a creature of habit. Once I tried Fabregé, my brunch scene was pretty much ruined. I’ve guiltily gone back for their Breakfast Poutine two days in a weekend … yes you read that correctly and yes I know there are only two days in the weekend. When it comes to the bfast poutine, I’m shameless.
I’m not sure if it’s the adorable family that runs the place or a crave inducing ingredient they sprinkle their food with but my addiction to this place is growing to the point of inappropriate. Therefore, when we approached this week’s Restaurant Challenge I immediately thought of how I could recreate this bangin’ dish.
I will admit … my homemade version is pretty much amazing but I wouldn’t trade it in for a trip to visit the friendly faces over at Fabregé.
1 Red Pepper
1/2 White Onion
2 Large White potatoes
2 tbsp of olive oil
pinch of salt
Hollandaise Sauce Recipe from here:
Wash and Clean all veggies
Cube the potatoes (keep skin on)
Place the potatoes in a microwave safe bowl, fill with water, and place in microwave for 10 minutes
Julienne the onion and pepper
Drain and remove the potatoes from the bowl and place on a baking sheet
Cover in oil and salt and bake for 20-25 minutes at 425 F
On the stove top sauté the onion and pepper on medium heat
When the pepper is soft and the onions are caramelized remove from heat
Start the hollandaise sauce
Mix together in a bowl the golden cripsy potatoes, sautéed peppers/onions and toss in the cheese curds.
Drizzle Hollandaise sauce over the combined dish.
Optional – Top this dish with a fried egg for the real Fabregé feel.
